Do you have hoarded of Easter chocolate left over? Wondering what to bake with it? I don’t know if your kids are anything like mine and decide to open every singe chocolate egg and mini egg and jets about any foiled item available in a chocolate Easter frenzy?! The little man embarked on a de-foiling adventure around Easter and I was left with a whole bowl of random bits of chocolate that he had discarded along the way (also to attempt to get it out of his vision so that I could control his sugar intake!) As we had SOOOOO much chocolate I decided to get my bake on… Ive never been good at making brownies, they have always been either too dry or too runny and never have that luscious crispy top. But this time… miraculously… they worked!

Now everyone makes these slightly differently but my Easy Easter Chocolate Nests are made with shredded wheat; other options are of course cornflakes or rice crispies, but for the authentic ‘nest’ like appearance I think shredded wheat is best. I also like to top them with the traditional Easter pastel shades of mini eggs; they tend to taste fabulous too (any other mini egg addicts out there? Just me?) This is also a great recipe to get your kids involved with as, honestly, is so easy!

I have been meaning to bake Biscotti for potentially around 6 months now loving a baking session, but after Christmas there are so many sweet treats left over there is no need!) My amazing Momma-migo (U think that should most definitely be a word… am I right?!) bakes them in batches and always has a tin of Biscotti at the ready for tea dunking. Her little man loves them and mine dives straight in whenever they are on offer, so I thought I’d give them a go. Now this Biscotti recipe is a twist on the Mary Berry one I have just added different ingredients to suit my personal taste; to be honest though they are so versatile you can chuck anything you want in there! I chose Chocolate and Walnut for the filing of my Biscotti and here is how the magic happened…

As the season of gluttonous goodwill approached I thought I would have a stab at Mince Pies. The seasons traditional sweet treat; along with many others that have entered my mouth already and will continue to do so until they stop selling them (Valentines? Easter maybe?) So Ive been experimenting with baking ever since becoming a Mama as Im sure that during birth there is this switch that suddenly clicks on in your brain that gives you the mama instinct to become a budding Nigella lawson or something?! Anyone else experienced this? I was truly terrible at all things backing in my no parenting days and suddenly now I find myself altering recipes, changing ingredients and writing my own recipes for you lovely peeps to enjoy with a cuppa!
