I have been meaning to bake Biscotti for potentially around 6 months now loving a baking session, but after Christmas there are so many sweet treats left over there is no need!) My amazing Momma-migo (U think that should most definitely be a word… am I right?!) bakes them in batches and always has a tin of Biscotti at the ready for tea dunking. Her little man loves them and mine dives straight in whenever they are on offer, so I thought I’d give them a go. Now this Biscotti recipe is a twist on the Mary Berry one I have just added different ingredients to suit my personal taste; to be honest though they are so versatile you can chuck anything you want in there! I chose Chocolate and Walnut for the filing of my Biscotti and here is how the magic happened…
Im back ladies and gents… and in true Elsa style, singing at the top of the mountains “… let it go…” This week has felt utterly exhausting (Three 6am starts at work has seen me totally not with it by the end of them – I got used to my ‘toddler that actually sleeps until 7.30am sleeping habits!) and has seen some major faux pas in the baking world, possibly due to the depleting energy levels actually! So in true Sunday style I am willing myself to let it all go!
Cake! We all love a bit of cake right?! Well I know I certainly do! Us parent types work super hard whatever we do day to day and we deserve a little chill time with a steaming cup of our beverage of choice and a slab (note: slab… not slice) of a sweet treat. I am usually a glutton for shortbread and have shared my recipe for that here, but this week I fancied making a huge beast of a cake for the return of the small mans Nana the weekend just gone. She had been away for a few weeks and she had missed her little sunshine boy loads, so I thought I would make an event of her return and in true Marie Antoinette style ‘Let them eat cake.”
So Ive been experimenting with baking ever since becoming a Mama as Im sure that during birth there is this switch that suddenly clicks on in your brain that gives you the mama instinct to become a budding Nigella lawson or something?! Anyone else experienced this? I was truly terrible at all things backing in my no parenting days and suddenly now I find myself altering recipes, changing ingredients and writing my own recipes for you lovely peeps to enjoy with a cuppa! I love shortbread, the Starbucks choc chip variety are to die for, and have always hankered after getting mine just right.
