As Pancake day fast approaches the nation will be looking to their recipe books or phones for a basic pancake recipe; I can tell you that you don’t need to look any further than right here as believe me I have tried them all and this one is THE BEST pancake recipe EVER!
For almost the entirety of my childhood I have used this recipe as it sat in the pages of my mothers Nigella Lawson cookbook ‘How To Be A Domestic Goddess’; just so you know I am not in any way trying to pass this off as my own… simply sharing her gorgeous and delectable recipe to the world so that we can all indeed become domestic goddesses like Nigella! I should add that the recipe in my Mamas book has become so used that the pages have quite frequently become stuck together with batter and the recipe itself is hardly legible!
Due to my mother moving to the country bumpkin life of Somerset and we are still firmly 3 hours away down South, for years I have tried lots of different recipes until recently I decided enough was enough… I needed my own copy of Nigella.
Nothing else would do.
So now I am sharing the delectable and delicious recipe with you all in light of Pancake Day being on the horizon as I feel that it would be a sin not to!
225g Plain Four
1 Tbs Baking Powder
Pinch of Salt
1 Tsp Sugar
2 Large Eggs, beaten
30g Butter, melted and cooled
Butter for Frying
If you are a bit more with the times, online myself, you may have in your kitchen such a thing as a blender… if so just pop all of the ingredients in there and voila!
If, like me, you are not so fortunate and do everything by hand then mix together all of the dry ingredients first, then make a well in the centre and add all of the wet ingredients.
Blend well and transfer into a jug for ease of pancake pouring!
The size of pan will undoubtedly result in the same size in pancake so if you want cutesie little american style ones that are perfect for stacking then go with a bellini pan.
Again, if like me you do not have such luxuries in your possession then just stick to a normal pan.
I popped a cheeky dollop of Jim Jams Hazelnut Spread, gifted to me for my Valentines Gift Guide, on them pancakes but you could stick to basics and go lemon and sugar or even syrup.
Why not try adding blueberries or sliced bananas to the mixture before you flip it.
